Recipe : Nasi Ulam

makes 3

Ingredients:
3 heaped bowls of cooked white rice
100g salted fish, grilled or fried in sesame oil until fragrant and then pounded until fine
1 tsp black pepper
1/2 tsp white pepper
4 -5 cekur leaves (buy from the wet market)
1 turmeric leaf (buy from the wet market)
2 -3 kaffir lime leaves

Shredded finely
50g ginger, skinned
50g young galangal, skinned
50g young turmetic root, skinned

Method

1. Combine all the ingredients together in a large mixing bowl.
2. Mix well and serve.

Chef's tip

- This spicy dish is good for relieving "wind".
- It contains local herbal vegetables, different kinds of ginger and black and white pepper.
- You should use high-quality salted Mergui fish for this dish.
